Breakfast

My kiddos love pinoy breakfast but since our place is quite far from the Filipino Store here in Atlanta, i have to find alternatives which are conveniently available and these are the favourite ones...
Toasted bread topped with sardines, mozzarella cheese, onion and red pepper.
My kiddos call it the "The sardines pizza"

This is oatmeal, one of my favourite too. Top with chocolate syrup and cherry, makes it more mouth-watering.

And whatever breakfast our family have, it's always perfect when it's sided with fresh fruit.


Since we all need energy to last through the day...we should always eat our breakfast. It will not only give vigour to our body but stimulates our brain to blog hehehehe. Enjoy your breakfast everyone.

Mithi



Noong ako'y musmus pa lamang, sing tayog ng punong ito ang aking mithiin. Sa tuwing akoy tatanungin ng mga nakakatanda "ano ang gusto kong maging pag laki ko", ang tanging sagot ko ay maging doctora o di kaya'y abogada. Tulad ng sagot ng ibang batang wari'y nakaguhit na sa aking kapalaran. Lumipas ang panahon, aking natanto na di pala ganon kadali makamit ang mga ito. At ng nagkaisip, samu't-saring karanasan ang aking napagdaanan na syang naging daan upang mahanap ko ang aking kapalaran.



Di man ako naging doctora o abogada, isang tunay na mithiin ang aking na-abot at patuloy na aabutin...ang maging mabuting ina....


At sa bawat araw na dumating, mithi kong lumaking mabait at mabuting tao....

...mapagmahal


... at masaya ang mga ANAK KO... Alam kong, sa tulong ng aking mahal na kabiyak ang mithiing ito'y makakamit.

Red


Today is my husband's and son Josh's 4th birthday. However, since Josh’s party will still be held on Sunday at Chuck E. Cheese's, I have to prepare a simple dinner for our family to celebrate it with. A cake for hubby and Josh to blow to make a wish and Carbonara for something long that signify long life will be wonderful. So, I dug into my fridge and my pantry and I came up with a carrot cake and since the theme of LP is “RED” I thought cherry will be perfect as the garnish.





But you know, what made it so perfect???




Is seeing my son super happy.

Liwaliw




Sa klase ng trabaho ng aking mahal na kabiyak, nagkaroon ang aming pamilya ng pagkakataong makita ang iba't-ibang lugar. Sa bawat paglalakbay, iba-ibang karanasan at iba't-ibang tanawin ang nasisilayan na syang nagsisilbing palatandaan sa aking isipan. Ito ang aking lahok sa paksang "Liwaliw" kung saan kakaibang kapayapaan ang aking naranasan.

Crunch






My two kids love crunchy waffle cones, so no matter what flavor i put in it, super "patok" talaga. I will try garlic ice cream next time and let's see hahaha.


And this is my favourite chocolate. Once i start eating it...it's hard to stop...

Ang aking LAING

"My very own version of Ginataang Tangkay ng Gabi"



Ingredients :

10 pcs. Taro (gabi) stalks (about 1 1/2 ft long)
medium size onion
garlic
ginger
1/4 cup dried anchovy or dilis
1/4 cup of pork
long green hot pepper (optional)
2 cans of coconut milk
2 tsp. shrimp paste or according to taste


Procedure :

  • Carefully remove the skin of the taro stalk. (siguraduhing maalis ang lahat ng balat para maiwasang mangati ang dila)
  • Slice it thinly and put it in a pan with water enough to soak all the stalk.
  • Let it boil for about 3 minutes.

  • Drain the taro stalk and put 1 can of coconut milk.
  • Let it boil till the oil come's out.


  • In another pan, saute garlic, onion, ginger, meat until golden brown.
  • Next is the anchovy and the shrimp paste.
  • Then put the sauteed ingredients together with the boiled stalk in a coconut milk.
  • Put remaining 1 can of coconut milk and again let it boil till it gets dry under a low heat.
  • If you like it spicy, just put the long green hot pepper. If not, just add more ginger.
  • Before serving, remove the coconut oil.



Perfect match for fried or grilled fish. Yummy... Enjoy the "laing ala sheng".

Vanessa Hudgens' Concert

Yesterday, August 7, 2008 we had a chance to watch Vanessa Hudgens' concert at Southern Star Amphitheater in Six Flags, GA. Vanessa Hudgens a.k.a. Gabriella Montez is my daughter's favorite character in High School Musical.

I asked Zoe to go in the middle for me to have a good shot and did not have a second thought. Brushing aside her shyness, she posed with a sweet smile.
This was Zoe's first time to watch a real concert. She has been to some concert or show before when she was only 3-5 year's old and her little mind still belongs to Wiggles, Barney, Dora the Explorer and princesses. Just when she turned 6 years old that she started to evolved to the world of High School Musical like every girls i know. And now that she is 7 years old, i have the greatest fear of what is coming next. I hope my little girl will not grow up too fast.

One of Zoe's favorite song is "Gotta go my own way" which is the only song she sang from High School Musical.

During the show, she was shouting timidly unlike the girls at our back who shouted really loud that annoyed "Ayel"( Zoe's playmate) till the end of the concert, "kawawa naman". They even prepared a banner "o di ba, di sila masyadong prepared". She also sang along with Vanessa and to my surprise, she knew almost all of her songs. Zoe couldn't take her eyes off her and I felt her excitement with full of admiration. Maybe even wishing that someday she will become a star like her or maybe not...ooopppsss i am the one having that thoughts heheheh...But hey..."Sinong mommy ang hindi mangangarap di ba". It's always free to dream anyway.

After the concert, Vanessa thank everybody for coming and specially mentioned her mom, dad and the sister. Mommy "Gina Guangco Hudgens" who grew up in Manila is a very proud mama and as a filipina, I'm so proud of her too for making this far in Hollywood.

Thank you to mother Macky and tito Rommel for the tickets, you made one of Zoe's dream possible. To mama Mia, thanks for the great company...di kami makakarating don kung wala ka.

Birthday

Every birthday in my family, there is always pancit...it's the ultimate favorite. I guess because we all wish for "long life".
Pancit is originated from Chinese cuisine and derived from Hokkien word "pian i sit" which means "something conveniently cooked fast".


Pichi pichi is also one of my favorite dessert besides chocolate cake of course.
